The UT Culinary Institute introduces a new wine program. This series of classes is designed to teach the intricate details that go into every glass of fine wine. Everything from growing grapes to food pairings to history of growing regions will be covered. Students will learn more about their favorite varieties and maybe make new discoveries.

Introduction to Wine Education and Evaluation

This series of three courses focuses on growing of grapes, production of wine, evaluation of wine, characteristics of wine, differing varietals along with food and wine pairing. This hands-on class is limited to 18 students.

White Wine Education and Evaluation

Learn the techniques for the production of white wines, varietals, growing conditions, food pairings and label reading while tasting and comparing six white wines from various countries. This course will be educational and fun with a heavy appetizer buffet prepared by the University of Tennessee Culinary Institute at the end of the class. Enjoy this night out of learning about wine and having a great time with other wine enthusiasts. Enrollment limited to 35 individuals.

Red Wine Education and Evaluations 

Learn the techniques for the production of red wines, varietals, growing conditions, food pairings, and label reading while tasting and comparing six red wines from various countries. Italian Wine Education and Evaluation

Learn the grape varietals, wine making history of Italy, label uniqueness and food pairings of red and white Italian wines. This course will be educational and fun with a heavy appetizer buffet prepared by the University of Tennessee Culinary Institute at the end of the class. Enjoy this night out of learning about wine and having a great time with other wine enthusiasts. Enrollment limited to 35 individuals.

Beer Enthusiast’s Course

This series of three classes covers basic brewing and brewing techniques, beer tasting, and beer and food pairings. It includes the hands-on, start-to-finish brewing of up to six different beers right in the UT Culinary Institute kitchen. There will be tasting of a number of different commercial beers representing a variety of classic styles. The course culminates with an in-depth tasting where you’ll learn the ins and outs of beer and food pairings. This course is taught by Dennis Collins who is an accomplished home brewer and Certified Beer Judge. He is also a graduate of the UT Culinary program. It’s a must for any beer enthusiast wanting to expand their knowledge and understanding of beer and brewing. Enrollment limited to 20 individuals.
