<p><strong>Stories, Tales and Adventures &#8211; The Appalachian Way</strong> - Bring a sack lunch and join Bill Landry for a day of adventure and learning about our southern Appalachian heritage. Sort out old sayings, stories and tales, in a backcountry setting where nature abounds. <p><strong>Early Settlers &#8211; Their Heritage and Dialect - </strong>Journey back to the days of early cove and hillside settlement with award-winning author and columnist, Sam Venable in a session on mountain ways, traditions and southern Appalachian dialect. <p><strong>Naturalist Workshop and Day Hike</strong> - Join thirty-year veteran Field School instructors, Joel and Kathy Zachry, for a day (morning workshop followed by hike) packed with stories, information and examples of the diversity of nature found within our Smokies. After learning about intriguing plants and animal life and how to avoid dangerous encounters, we&#8217;ll head outside and put the newly-learned skills to good use. We&#8217;ll search for overturned rocks and logs, tracks, scat piles and other evidence of who lives among these mountains while we exchange ideas on gear and our favorite trails. <strong><a href="https://aceweb.outreach.utk.edu/CourseStatus.awp?&amp;course=12SU917">June 16</a></strong></p>

Delve in the richness of French Cuisine. Experience the geography of the country, traditions, special holidays, food and dishes native to France. Enjoy an introduction to the French style of cooking by preparing an authentic meal. Truly Authentic Korean cooking taught by our own Dr. Youn-Kyung Kim. Learn Korean culture, be introduced to the traditional culinary style and prepare an ethnic centered meal.</p>

<strong>Irish Cuisine</strong><br />
Special guest, <a href="http://www.knoxnews.com/news/2009/nov/05/dishing-with-garrett-scanlan/" target="_blank">Chef Garrett Scanlan</a>, will be teaching the skills of cooking with Irish flair.  Come learn Irish culture; be introduced to the art of Irish cooking and prepare an authentic meal. Garrett Scanlan is a European trained Master Chef who has worked in top restaurants and hotels in Ireland, Britain, France, Switzerland and the Bahamas before immigrating to the United States.  A lifelong member of the ACF and AAC, Chef Scanlan is also a former member of the Irish Culinary Olympic Team.  Chef Scanlan is currently the host and presenter of the hit PBS series ’<a href="http://easttennesseepbs.org/content.aspx?article=1641&amp;parent=1634" target="_blank">90 Miles with Chef Garrett</a>’ and owner of ‘<a href="http://www.garrettsdeli.com/default.asp" target="_blank">Garrett’s Downtown Deli</a>’ with two locations in the Knoxville area.</p>
<p style="padding-left:30px;"><strong>Liberian Cuisine</strong><br />
Situated on the west coast of Africa, Liberian cooking is steeped in local traditions. <a href="http://www.facebook.com/Palavah.Hut" target="_blank">Palavah Hut</a>’s lead chef, skilled in Liberian cuisine, will teach the class.</p>

<strong>Japanese (sushi)</strong><img class="alignright size-medium wp-image-1584" title="German" src="http://utnoncredit.files.wordpress.com/2012/01/shutterstock_91919270.jpg?w=199&#038;h=300" alt="" width="199" height="300" /> Experience the rich sushi culture of Japan while mastering unique culinary techniques. Learn to make sushi from a chef of one of Knoxville’s leading sushi restaurants, <a href="http://www.namasushibar.com/" target="_blank">Nama</a>. The class will cover three types of sushi prepared in the traditional manner.</p>

Rich hearty German cooking brought to you by Chef Edgar Herrmann, once executive Chef at Legends Country Club. Chef Herrmann brings his expertise to the culinary classroom. Learn German culture and cuisine while preparing a traditional meal.</p>
<p>All classes are $99 and taught at the <strong><a href="http://culinary.utk.edu/index.html" target="_blank">Culinary Institute at University of Tennessee</a></strong>. Classes meet on Saturdays from January through March.</p>

<div>Non-Credit Photography Certificate Instructor Colby McLemore was named 2011 – 2012 Photographer of the Year for the second time on Wednesday, December 7, 2011—his birthday. <a href="http://utnoncredit.wordpress.com/2011/08/24/photography-instructor-colby-mclemore-recognized/">Earlier this fall</a>, he was recognized by <a href="http://www.tnppa.com/">Tennessee’s Professional Photographer’s Association</a> for having the highest combined scores from a panel of five professional master photographers. (He won a total of 11 awards in that state competition.)</div>

<div>On the 7<sup>th</sup> of December, <a href="http://ppetn.com/author/admin/">Professional Photographers of East Tennessee</a> awarded him its top honor for having received the highest cumulative number of votes throughout the year from his professional peers. Colby placed in every monthly competition, except one, and for one month, he received all the awards (first, second, and third places). “Every dog has its day,” Colby says. “Apparently, this dog has had more than one. I’m overwhelmingly blessed.”</div>

<p>The University of Tennessee has had a close relationship with <strong><a href="http://www.appalachianbearrescue.org/" target="_blank">Appalachian Bear Rescue</a></strong> since its inception in the early 1990s.  University staff and graduates have served as board members and advisers and the <strong><a href="http://www.vet.utk.edu/" target="_blank">School of Veterinary Medicine</a></strong> has provided veterinary care for numerous bears, offering student veterinarians a rare and valuable opportunity to practice their skills and learn from these wild animals.</p>
<p>ABR operating as a 501 © 3 non-profit organization takes in orphaned and injured black bear cubs for rehabilitation.  Eligible bears are released back into the wild as soon as they are in good health and in accordance with guidelines established by the <strong><a href="http://www.tn.gov/twra/" target="_blank">Tennessee Wildlife Resources Agency</a></strong>.  Many of the regional wildlife officers and Smokies park staff who transport the bears to and from the operation are also graduates of the university.  A record number of bear cubs (23) have been housed at the facility this fall due to a failure in the mast or food crop.</p>

<p>The show is this Tuesday, October 18 from 7-8pm at 555 Dabney-Buefhler Hall. Admission is free, however in recognition of the theme, “Chemistry—Our Health, Our Future!” a donation of a bar of soap for those in need is requested. For more information call 865-974-1065.</p>
<p>This past summer Dr. Al Hazari taught Fun With Forensics: Adventures In Chemistry for <a href="http://www.conferencesandnoncreditprograms.utk.edu/kidsu/default.html">KidsU</a>.  The class became investigators by exploring scientific and chemical principles and techniques used to detect criminal acts. This winter Dr. Al Hazari will also a teach a Forensic Chemistry class for adults this winter. <p>National Chemistry Week (NCW) is a community-based annual event that unites ACS local sections, businesses, schools, and individuals in communicating the importance of chemistry to our quality of life.</p>
